French Toast Strata: A Breakfast Favourite
I’m going to tell you a little story. When Andrew and I were still dating, his mom made “lazy man’s french toast” for breakfast for everyone headed to their ball hockey game (I think it’s called ball hockey) that day. It was delicious. Imagine a mix of bread pudding, cinnamon buns, raisins and cream cheese. I knew she had the recipe hidden somewhere in their house. I was just a bit shy to ask.
Fast forward to about 3 years when I’ve already moved in and we were looking through one of my mother-in-law’s casserole cook books. All of a sudden, I spotted this French Toast Strata on the page. I was beyond excited to learn this was the recipe I have been looking for. I quickly gathered (or shopped) certain things we needed because we have a lot of stale bread and I wouldn’t want that to go to waste. Especially now when I finally found the recipe for their “lazy man’s french toast”.
Andrew and I have had this for breakfast twice in 3 weeks. I can’t make it all the time because of all the dairy involved into making it. Sidetone: Andrew is allergic to dairy. This doesn’t stop him from consuming huge amounts of ice cream and cheese.
FRENCH TOAST STRATA
- 4 ounces day-old French or Italian bread cut into 3/4 inch cubes (4 cups)
- 1/3 cup golden raisins
- 1 package (3 ounces) cream cheese, cut into 1/4-inch cubes
- 3 eggs
- 1 1/2 cups milk
- 1/2 cup maple flavoured pancake syrup
- 1 tsp vanilla
- 2 tbsp sugar
- 1 tsp ground cinnamon
- Additional maple flavoured pancake syrup (optional)
- Spray an 11×7 baking dish with a cooking spray. Place the bread cubes in the prepared dish in an even layer. Sprinkle over raisins and cream cheese evenly.
- Beat eggs in a medium bowl until well blended. Add milk, 1/2 cup syrup and vanilla. Mix well. Pour egg mixture over the bread mixture. Cover and refrigerate overnight.
- Pre-heat oven to 350 F. Combine sugar and cinnamon, mix well, and sprinkle evenly over strata.
- Bake for 40-45 minutes or until it’s puffed, or when a knife inserted into it comes out clean.
We modified ours a little after making the first one exactly how the recipe said. On our second strata, we didn’t add any raisins or pancake syrup until after everything was done and baked. It wasn’t as sweet as the first one which I find better because it will allow your guests to sweeten their plate up however much they want.
